Aglio e Olio with Parmesan

A timeless Italian classic made with garlic-infused olive oil, chilli flakes, and perfectly cooked spaghetti. Finished with a generous shower of Darima’s aged Parmesan, this dish becomes richer, more aromatic, and full of deep umami flavour showcasing the purity and craftsmanship behind Darima’s cheeses.

Ingredients
Spaghetti – 200 g
Olive oil – ¼ cup
Garlic – 6 cloves, thinly sliced
Dried chilli flakes – 1 tsp (adjust to taste)
Fresh parsley – finely chopped
Parmesan cheese – freshly grated
Salt – to taste

Method
Cook spaghetti in salted boiling water until al dente. Reserve some pasta water and drain.
Heat olive oil on low heat and gently sauté garlic until lightly golden. Add chilli flakes and stir briefly.
Add the cooked spaghetti to the pan, tossing well. Splash in reserved pasta water if needed to loosen the sauce.
Season with salt, remove from heat, and finish with parsley and generous grated Parmesan. Serve immediately.
